Green beans and Leek Pie

Salted pies are the easiest choice in summer. You can stuff them as you prefer (alias what there is in the fridge…) and you can eat them even cold wherever you like. Kids enjoy them, so you can sort out an alternative lunch!!

Because I like to change and I find extremely boring to cook always the same things, I came out with this.

You boil green beans (lets say about 600 gr. for 4 people). In the meantime, you fry gently one sliced leek in about 100 gr. of butter and you lay in a pan the puff pastry.

You beat 3 eggs, adding 3 spoons of flour, salt, pepper, and about half glass of milk.Now you are ready add the leek and the green beans you’ve cut into bits. You steer the compound and pour it into the puff pastry.


Sparkle generously with parmesan and after 40 minutes in the oven at 175 degrees, this will be the result:
